Bacon lettuce tomato egg frittata

Ingredients

  • 4 eggs
  • 3 slices of thick bacon
  • ¼ cup milk
  • ½ tomato diced
  • 1 cup spinach
  • ¼ cup diced onions
  • Salt & Pepper to taste

Instructions

Slice bacon into strips. Heat large skillet over medium to high heat.

Cook bacon until crispy, remove, and set aside.

Use a tablespoon from bacon fat to sauté the onions.

Chop spinach and diced tomatoes.

In a medium size bowl mix eggs, milk, salt, and pepper.

Add remaining ingredients. Mix well. Pour into ramekins.

Place in a preheated oven of 375, bake for 20-25 minutes.
