Breakfast ScramblePrint Recipe
- 1 pound baby red potatoes
- 1 pound breakfast sausage
- ½ cup diced onions
- ½ cup diced green peppers
- 6 eggs
- 2 cup vegetable oil (for frying)
- Salt & pepper to taste
Heat oil over medium heat. Oil is ready when tiny bubbles start to form.
Dice red potatoes into halves. Fry potatoes until golden brown about 10 minutes.
Meanwhile in a separate skillet brown breakfast sausage.
Remove sausage add onions and green peppers let sauté for 5 minutes.
Add sausage and potatoes let cook together for 5 minutes.
You can cook your eggs separate and add the end or you can cook the egg is the sausage and potato mix.
