Buttermilk Blueberry PancakesPrint Recipe
- 1½ cup pancake mix
- ¾ cup buttermilk
- 1 egg
- 1 pint of blueberries
- 2 tablespoon sugar
- ¼ cup blueberry syrup
In a bowl, cover blueberries in sugar let stand for 30 minutes.
Add half of blueberries and syrup to saucepan let cook for 10 mins.
Mix milk, egg, and pancake mix. Fold in remaining blueberries.
Over medium heat cook pancakes 1-2 minutes per side.
Top pancakes with blueberries and enjoy!
Makes 6-8 pancakes.
