Cajun Sausage and PeppersPrint Recipe
- 1 smoked sausage
- 1 red bell pepper
- 1 yellow or orange bell pepper
- 1 small onion
- 1 tablespoon tomato paste
- ½ chicken stock
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning (used Weber’s New Orleans seasoning)
Slice sausage, onions, and peppers.
In large skillet heat oil over medium high heat.
Cook sausage until golden brown.
Add peppers and sliced onion cook until tender.
Add seasoning. Stir.
Add tomato paste. Stir.
Add stock simmer. Turn heat to low.
Let simmer for 5 minutes.
Serve over rice.
Depending on your heat tolerance increase or decrease Cajun spice amount.
