Chipotle Shrimp TacosPrint Recipe
- 1 pound medium shrimp (peeled and deveined)
- 1 tablespoon chipotle powder
- 2 tablespoon olive oil
- Corn tortillas about 8
- Fresh cilantro
- 2 limes (juiced)
- 1 ripe avocado
- 1 ½ cup broccoli slaw
- Salt and black pepper to taste
In a large bowl mix together broccoli slaw, lime juice, and avocado. Salt and pepper to taste. Set aside.
Cover shrimp with chipotle powder.
In large skillet heat oil over medium heat.
Cook shrimp 2-3 minutes per side or until pink.
Warm tortillas in a flat skillet or griddle for about 2 minutes per side.
Build taco. Tortilla, slaw, shrimp.
