Coconut Shrimp

Ingredients

  • 1 pound medium shrimp (peeled & devined)
  • 1 cup vegetable oil (enough for frying)
  • 1 1/2 cup shredded coconut
  • 1 cup plain panko bread crumbs
  • 2 tablespoon of all purpose flour
  • 2 eggs
  • salt and pepper

Instructions

Salt and pepper the shrimp

Mix eggs and flour to create a batter

In a shallow bowl, combine panko bread crumbs and coconut flakes

Coat shrimp in egg-flour batter and coat the shrimp in the coconut mixture

Heat oil over medium heat

Gently place shrimps into the hot oil

Cook shrimp 1 to 2 minutes per side

Place shrimp on a paper towel to absorb excess oil

Notes

Don't over crowd your skillet with shrimp, this could cause the shrimp not cook properly.
