Jambalaya Stuffed Peppers

Ingredients

  • 6 red peppers
  • ½ cup diced celery
  • ½ cup diced onions
  • ½ cup diced red peppers
  • 1 cup Andouille Sausage
  • 1 chicken breast cubed
  • 2 tablespoon of Webber N'Orleans Cajun seasoning
  • 1 teaspoon salt
  • 1 tablespoon oil
  • 1 cup chicken stock
  • 1 cup cooked white rice

Instructions

Preheat oven to 375 degrees.

Cut the top of the peppers remove the stems and dice. Remove the membrane from the peppers.

Heat oil over medium heat. Add sausage cook for 5 minutes.

Using a slotted spoon remove sausage.

Add diced onions, celery, and peppers sauté for 10 minutes.

Add cubed chicken. Salt the chicken. Let it brown.

Add cooked rice, sausage, stock, and seasoning. Stir.

Scoop mixture into peppers. Place peppers in a baking dish.

Bake for 30 minutes

Notes

If you can't find Webber N'Orleans seasoning just use your favorite cajun seasoning.
