Lemon Blueberry PancakesPrint Recipe
- 2 ½ cup pancake mix
- 1 lemon (juiced and zest)
- 1 cup of blueberries
- 1 cup milk
- nonstick spray
- Lemon Glaze
- ¼ cup confectioners' sugar
- 1 lemon (juiced)
Mix together pancake mix, zest, juice, and milk. Let pancake mix rest for 10 minutes.
Heat griddle to medium heat and spray with nonstick spray. Cook pancakes 2 minutes per side.
For the glaze: whisk together sugar and lemon juice.
While still warm top pancakes with the glaze.
Makes 8-10 pancakes.
