Shrimp Fajita Rice

Ingredients

  • 1 pound of small shrimp (peeled and devined)
  • 1 cup of jasmine rice
  • 2 cups of chicken stock
  • 1 tablespoon tomato paste
  • ½ cup green pepper diced
  • ½ red pepper diced
  • ½ cup medium onion diced
  • 2 tablespoon of Fajita (I used Badid seasoning)
  • ½ tablespoon chili powder
  • salt and pepper to taste

Instructions

Marinate shrimp with 1 tablespoon of fajita season and ½ tablespoon chili powder

heat skillet over medium heat

saute peppers and onions for 5 minutes

add seasoning and tomato paste

add chicken stock bring to boil

add rice, turn down heat, cover and let simmer for 10 minutes

add shrimp continue cooking for 5 to 7 minutes

Notes

You can enjoy this dish on its own or with flour tortillas.
