Twice Baked Loaded Potato

Ingredients

  • 4 medium russet potatoes
  • 3 thick slices of bacon
  • ½ cup finely diced onions
  • ½ cup of shredded cheese
  • 2 tablespoons butter
  • 1 green onion diced
  • ¼ cup milk
  • 2 tablespoon sour cream

Instructions

Poke holes in potatoes, wrap in aluminum foil, and place in a 400-degree oven bake for 1 hour or until you can stick a fork all the way through.

Meanwhile, in a large skillet heat crisp bacon over medium heat. Remove and set aside.

Use about 2 tablespoon bacon oil to cook onions for 5 minutes. Set aside.

Once potatoes are done let cool. Slice in half, scoop insides in mixing bowl.

Mix all ingredients. Place mixture in potato halves, top with extra cheese and bake for 10 minutes. Top with green onions.
